Apple Oat Bars

With a salted peanut caramel sauce!

Apple Oat Bars

Easy, vegan, gluten-free (if desired), without oil and industrial sugar.

Ingredients
  

  • 1/2 cup/150g apple puree
  • 2 cups/280g vegan Skyr
  • 2 cups 250g oat meal half fine and half big
  • 1/3 cup/60g sugar/-alternative e.g erythritol
  • 1 tbsp starch
  • 60 g sugar / alternative e.g. erythritol
  • 1 tsp Baking powder
  • 1 pinch of salt

Topping:

  • 3 apples
  • 2 tsp cinnamon
  • 1 tbsp starch

Sauce:

  • 1 tbsp maple syrup
  • 1 pinch of salt
  • 1 tsp peanut butter

Instructions
 

  • Preheat the oven to 180 ° C / 350°C F top and bottom heat.
  • Mix all the ingredients for the dough and spread it in a baking tin (mine was 18x 26cm, prepared with baking paper). Cut the apples into pieces (not too small, otherwise they will dry out), mix with the cinnamon and starch and spread on the dough. Bake for about 60-70 minutes.
  • Mix the sauce (optional) and enjoy the oat bars 🥰
