On time for easter this weekend I came up with this amazing recipe. That cake is honestly one of the best things I’ve ever made – it’s juicy, clean, healthy and the yummiest thing eveeeer. I topped it with some apple slices and cinnamon , which made it even better. I had the whole freshly baked cake with me in Amsterdam and there was nothing left when I came back! The girls who tried it, loved it! Enough talk. Here’s what you’ve been waiting for!
Recipe:
Dry ingredients
- 300g spelt flour
- 50g vanilla protein ( I used pea and rice protein )
- 1 tsp baking soda (5g)
- 2 tsp baking powder
- 1pinch of salt
Wet ingredients
- 185g freshly grated carrots
- juice of 1 lemon
- 60g coconut oil (melted )
- 1 chia egg ( 1tbsp chia seeds+ 3 tbsp water → chill for 15 min
- 1 tsp apple cider vinegar
- 80g agave syrup
- flave drops ( I used the flavor hazelnut vanilla is fine too )*
- 100ml oat drink
Other
- 1 apple
- cinnamon
* side note: if you don’t have flavdrops, use more agave syrup to make the cake sweeter
Instructions
Mix all the wet ingredients in a big bowl together until it’s a smooth texture. Add in the dry ingredients
and use a hand mixer to get a nice dough. Preheat the oven to 180°C upper/lower heat. Spread the dough evenly into a loaf pan, slice the apple into thin slices and top the cake with them. For some extra spice, spread a teaspoon cinnamon on the apples. Bake the cake for 60, let it cool down and enjoy!
