Falafel zucchini sandwich

How can something so easy be so incredibly delicious?!

This sandwich was a spontaneous creation and I still can’t believe how yummy it turned out. My issue was that I needed something for lunch that doesn’t take an eternity to prepare, is healthy and includes zucchini ( they don’t get younger when they’re chilling in your fridge for a week, haha).

Anyway! I got a brainstorm and tadaaaaa: A falafel, zucchini sandwich! Oh just btw I did a full day of eating video on that day, so you should check out my YouTube channel if you want to actually see how I made this 🙂

Recipe ( for one sandwich)DSC07965-004

  • 2 slices of toast / bread
  • mixed salad / salad leaves
  • 1 small zucchini or 1/2 “normal” zucchini
  • falafel ( I used 5 small ones from “take it veggie”( available at Kaufland) )
  • vegan sandwich sauce ( I used one by veganz )

→ you can also make your sauce with vegan yogurt, herbs and some lemon juice

You may also need
  • olive oil
  • salt & pepper
Instructions
  1. Slice the zucchini in slices
  2. Spice the zucchini with salt and pepper
  3. Heat up 2 pans and prepare them with some olive oil
  4. Roast the falafel and the zucchini slices separately until they’re golden brown
  5. Toast the bread and spread some sauce over them
  6. Now it’s time to layer the falafel, zucchini and salad. I did it in the written order! Last but not least cut the sandwich in a half and enjoy 🙂
